Well, hello everyone! I know it's sort of shocking to hear from me because I've fallen off the blog wagon lately but I am seriously back! I've got a lot to share, but I'll break it up into daily posts so I don't blog you down with too much information.
Ok! So, if I was speaking hypothetically about working on a new cookbook that would recreate old, classic desserts and I asked you what you would hypothetically wish would be in that hypothetical book, what would you say? Is there any cake, cookie, pie, teacake, brownie, mish or mash that you've been dying to experience?
Just askin...

i was inspired by the picture... doughnuts! my husband is always on the quest for good vegan doughnuts. I personally would love a good vegan recipe for baklava, complete with the flaky crust. I just bought your cookbook today, we're psyched to start baking this weekend!
definitely croissants. Traveling in Italy with non celiacs that was the one thing they ate everyday that I was really missing.
Ditto on the doughnuts! My son can't have dairy and he really longs for some tasty doughnuts to enjoy...
a vegan version of carrot cake with the cream cheese frosting - can you recreate that great taste of cream cheese frosting without the cheese?
sugar cream pie!!
That's funny! I just posted an "I lost my blogging mojo, but I'm back" blog post too! :)
Forget about a croissant recipe...I want to be able to BUY them from you!
Here is a link to a blog post I did where people posted what they missed the most and wanted gluten-free in the comments. Hope it helps. Over 300 ideas.
Ecoglamourous diggs coconut. What about a mini cupcake sized vegan coconut cream pie? Yum. Keep up the awesome work Erin! Ecoglamourous Magazine loves Babycakes NYC!
How about some rice crispies treats?
-popovers! anyone remember those?!
-classic cheesecake
-donuts/eclairs
-peanut butter cups
BOSTON CREME PIE!
First, I truly can't thank you enough! I am a self proclaimed dessert addict and b-feeding mommy of a little guy who is allergic to dairy. Pair this with the fact that my Mom is a top notch baker and I have always had superb treats at my disposal, learning that all dairy would have to be stricken from my diet was like being kicked in my growling stomach. At a time in my life when I NEEDED quality desserts the most you saved me! Your cookbook is THE BEST, and I am quickly making my way through each recipe-EVERYTHING IS AMAZING!
Anyway...some *wishes* for your next cookbook (can't wait!):
-cream cheese frosting and cheesecake (both mentioned above)
-a bar base/bars (like 7 layer/magic bars, s'mores,etc...)
-holiday stuff (sugar/cutout cookies, trifles, etc.)
-whoopie pies (I have been thinking about making my own using your brownie or cupcake recipe and vanilla frosting)
I am sure I will think of more, which I will pass along. YAY! Congrats on all of your success, and again THANK YOU! (Sorry for the novel!)
I'm a celiac, and I always say that the day before I die, I'm going to eat a croissant.
However, if you can come up with a legit croissant recipie that is as flaky and delish as the real thing, I wont have to die!
Coconut cake - all that fluffy frosting.
Egg-free, dairy-free, soy-free, etc. - key lime pie.
I second the whoopie pie request.
Baking the heck out of your first cookbook, it hasn't made it off the kitchen counter to the bookshelf yet.
Beignets! Panettone! Cannolli! Phyllo Dough for Baklava! Cream Puffs and Eclairs! Ditto on Coconut Cake! Puff Pastry anything! Funnel Cake! Fruit Empanadas! Doughnuts for certain (including how to fill them)! Bread Pudding! Turnovers! melt in your mouth shortbread cookies!
I'm completely obsessed about Babycakes after I bought your cookbook! I'm raving about it everywhere I go! Anyway, the best desserts would have to be:
Custard filled donuts! Flan! Tiramisu! Cheesecake! Crepes! Jello! Pudding and an Ice cream sundaes!
Because they all deal with dairy and I'm really interested in the vegan substitutes...
ps. I can't wait for the LA Babycakes!
Create a good vegan Tiramisu and I'll give you the keys to my house and call you "the Queen" forever.
ditto on the vegan tiramisu
heard a lot about your vegan donuts and looking forward to the recipe!
banana cream pie =)
Real cinnamon rolls. Not the donut style ones, and not the cinnamon cake ones, something more like the old pop out can ones or the mall version cinnabon. It's got to have frosting, be gooey (not bready), be plenty cinnamony, yet not too sweet.
I second the croissant idea too.
I would love love love the cinnamon rolls too. Gluten free, too. No Spelt! If I could create a roll-able gluten free dough I'd cry.
I live in Europe, but what I loved in US was cheescake! And cookies - but we have them already in the cookbook. Cheescake would be a pleasure! Also already mentioned doughnuts...and what I liked in US also (!) was some kind of pecan bar (?) and key lime piece of cake (something like that). Those were great! And regulach!
So my suggestions:
cheescake
pecan bar
regulach
douhnuts
Key Lime bar
