So I just signed up for Twitter to get the babycakes scoop and still trying to figure out how to do this all while I work, of course. I was going to try to make the double chocolate chip cookies I saw on Goop and wondered if I could replace the 1 1/4 cup of sugar with agave?
Hello Babycakes,
I found out about you through Goop and I'm so glad I did! I'm a singer with an incurable sweet tooth! While I'm no longer a vegetarian nor allergic to anything, I do try to stay away from dairy, especially when I'm singing. I also wanted a healthier version of all my favorite sweets. I went ahead and bought your cookbook and I must say that Erin McKenna is GENIUS! I baked the double chocolate chip cookies and brought them to rehearsals to share with my colleagues. They couldn't believe these were vegan and gluten-free. I also noticed that when I eat sweets from Babycakes I don't feel bloated, and I don't get the surge of energy and subsequent crash I experience when eating sweets with dairy and refined sugars. I now limit all my sweets to those I bake from your recipes and I've also decided to go gluten-free. I found out that I'm a bit more sensitive to gluten than I realized.
THANK YOU for all that you do and for improving the lives of so many who do suffer from celiac disease. While I don't suffer from this condition, I feel that my diet has benefitted greatly from your wisdom. Now I can truly enjoy my sweets!
Alexandra
PS: Please tell me you will include your donut recipe in your next cookbook?!?!?!
Wow, that's great to hear! I love Epcot - I even worked there for a summer.
Don't forget that Epcot is just ONE of the four theme parks that make up Disney World (plus the two water parks, two entertainment districts, 20-something hotels, etc).
Hope you got a chance to ride the Tower of Terror at the Disney's Hollywood Studios park, Splash Mountain at the Magic Kingdom park, etc.
Keep up the good work!
