i have your cookbook, and am planning to make the red velvet cupcakes for my daughter's bday party (maybe i can convert some Mom's from the standard, disgusting, grocery-chain bakery cakes!!). i'm a little confused on the frosting recipe - do you melt the coconut oil? i don't want to do this wrong!!
i was very excited to discover your cookbook here in Australia your recipies are moist and delicious. I did however expect a soy free recipe for the frosting as on your website you state that the cupcakes are soy free, is there something I can use as a substitute for the soy milk and soy milk powder in this recipe?

@marcia. yes, you melt the coconut oil. be sure to read the intro to the book -- you must also use dry measuring cups.
