New Baking Video!

In which young Oliver (my nephew and godson) tires of watching us ladies fumble with the BabyCakes Madeleine recipe, dons his customized bakery outfit, and doses a batch of cookies with some magical powers and helpful advice. Thanks, Ollie! --Love, Erin McKenna


Makes 24




Preheat oven to 325° F. Brush 2 madeleine trays with coconut oil and set aside. Line a cookie sheet with parchment paper.

Combine the four, sugar, potato starch, arrowroot, baking powder, salt, xanthan gum and baking soda and whisk until combined. Add the oil, applesauce, and vanilla and stir with a rubber whisk until the batter is smooth. Gradually add the hot water, stirring constantly, until incorporated. Drop a rounded tablespoon of the batter into each mold, gently spreading it to fill the mold. Bake for 12 minutes, rotate the pans and bake 6 minutes more, or until the tops are golden brown. Remove from the oven and let cool for 15 minutes. Place the cooled Madeleines on the reserved cookie sheet and dust with the powdered sugar.

Zach Galifianakis Hands Out BabyCakes


zach.jpegLast Friday afternoon we were in the throws of the typical pre-weekend mayhem at the bakery--the girls were spinning their usual magic behind the counter while the bakers fought to catch up with the line snaking out the door.

Little did we know that our lives were about to change for almost 24 hours.

At roughly 12:27 pm Zach Galifianakis entered the bakery and walked straight to the kitchen looking pensive, and wild. In a hushed urgent tone he leaned in to Kitchen Rachel and confided, "I need 500 cupcakes. Tomorrow." Gasps all around. He knew what he was asking for was outrageous and begged us to do it. He explained it was his birthday and he was doing a talk for the New Yorker Festival and he needed cupcakes from us. I swear, he was practically crying. I would have told him NO but Kitchen Rachel was already mesmerized by his red beard and accepted the order. Way to go, Kitchen Rachel.

That night and straight through Saturday me and Sabrina cursed Zach's name as we slaved over the order. Batch after batch of mini cupcakes came out of the oven and were transferred to trays for a quick cool down in order to meet the fast approaching deadline. Do you know how hard it is to frost a mini cupcake? Yeah. Now think about doing 500. Terrible. We struggled to find enough space in the refrigerator to store all the bakery boxes but somehow, we made do and got them to the theater unscathed and on time.

Sunday morning I woke up (with a very sore arm but whatever, I'm over it) to this blurb in the New Yorker:

Saturday night on West Thirty-seventh Street was a special night: Zach Galifianakis turned forty-two. To mark the occasion, he appeared in conversation with Andy Borowitz, bought five hundred gluten-free cupcakes (from Babycakes) to share with the audience, and asked everyone to serenade him with a rendition of "We Wish You a Merry Christmas.

That's it?!?! Thanks a lot Zach. We hope you had a really Merry Christmas.

In Good Company for LA's Fashion's Night Out


2-Fashions-Night-Out-at-3.jpeg Something has to be pretty major and ultra chic to make us want to bump our 8:00 bedtime up to 10:30. This Fashion Night Out benefit for the Silverlake Conservatory is just that major. We're incredibly honored that our brownies and donuts were invited and will be partying with the best of them. 3.1 Phillip Lim will host this event alongside Refinery29 at its Robertson store. Our favorite band Cults and KCRW DJ's will entertain us when we're not too busy gazing adoringly at the 3.1 fashion line, sipping Deleon Tequila and eating Xoia tacos. Meet us there to have a blast while keeping music alive on the eastside.

Get Ready LA! We're Opening on Larchmont


larch.jpgThat photo you're looking at to the left is the shell of our new BabyCakes on Larchmont! I'm beyond thrilled to tell you Los Angelesies (I made that up) that we've just signed a lease at 236 North Larchmont,formerly the Pinkberry, and we are so pumped! All the details I can divulge are here in this Eater post but I'm sure I'll have many updates to come! If all goes according to plan, we'll open the end of this December.

As the article notes, we're going to focus on donuts at this shop but also carry our cupcakes, cookies and brownies as well those waffles you've come to crave. Don't worry Upper Manhattan, San Francisco, Chicago and beyond--we're still looking for the perfect home. When we see it, we'll go for it.

David Lebovitz at BabyCakes!!!


david2.jpegI met the famous, funny, freaky pastry chef David Lebovitz when he stopped by BabyCakes last year and for most of you food and pastry people out there he doesn't need much of an introduction. If, however, you aren't familiar take a look at his best selling books like Room for Dessert, The Perfect Scoop or Ready for Dessert. At first glance you'd guess he's an uptight pastry snob but he's quite the opposite. Take a browse at his twitter and you'll find he's one part Joan Rivers, one part chocolate scientist (is that even a thing?) with a Justin Bieber-like following. I guarantee you'll soon be checking back hourly for his latest updates and become a psycho fan like the rest of us, not that he needs any more stalkers.

The reason I'm blabbing on and on about this guy because he's on a slow boat from Paris to NY and will be making his way to BabyCakes on August 3rd from 6-7:30 to chat and sign books for you. We'll be selling copies of his hardcover edition of The Sweet Life in Paris for the price of the paperback which is a big deal! Please RSVP here so we know how many people to expect. Former BabyCakes Girl, Cooking Channel Star!


edeh.png The moment Eden Grinshpan walked through the doors of BabyCakes on Broome Street a few years ago, I knew I had to hire her. There was something about her! For a good while, she worked behind the counter and her larger than life personality, sense of humor and her ability to laugh sincerely at EVERYONE'S jokes made her a great addition to the staff. She even made a little cameo in my first cookbook trailer that you can watch here. During Eden's time at BabyCakes she charmed everyone she met and had quite a big fan club herself (some were welcomed fans...some, not so welcome, get it?)

One thing that struck me about Eden was how focused she was on her single goal: to have her own TV show and I always knew it would happen for her. She worked tirelessly to see her vision through and now this Sunday her very own series, Eden Eats will premier on the Cooking Channel at 8pm. I'm so proud of you Eden! Congratulations!

BabyCakes at Yankee Stadium!


yankee .jpegHey guys guess what?!?! Thanks to the huge demand, you can score BabyCakes frozen cookie and brownie cream sandwiches at Legends Suite in the Yankee Stadium starting this weekend! We're working on providing goods at more concessions but in the meantime this is a really big deal and we are so excited! Isn't that obvious with all the exclamation marks I'm using!

Peanut Free Sections at Baseball Games!

Many baseball stadiums are beginning to recognize the severity of peanut allergies and offering special nights when allergic kids (and adults) can come watch the games at ease. The Huffington Post reports that upstate New York Rochester Red Wings stadium has begun offering peanut free seating. Boston's Fenway Park sold peanut free seating at three games this season and at Target Field in Minneapolis, 100 lucky fans will watch the game and be provided with a separate entrance and peanut-free concessions. Way to go baseball!

Now let's work on getting BabyCakes into Yankee Stadium, am I right?!

Book Signing the Saturday at Bust Mag's Craftacular Fair!!

Thumbnail image for poster_web.jpgAny Bust Magazine fans out there? If so, you are well aware of their mind-blowing Craftacular fairs they throw each year. I try to take the day off from the bakery each time they put one on because you can literally spend hours wandering around and marveling at what each crafter has to offer. Plus, if you get hungry there's tons of food and drinks and good music. It's my kind of party!

This year I was lucky enough to be invited to come do a book signing and I said yes without hesitation! Here's what the Bust Mag blog says about the event:

Are you ready for our biggest spring Craftacular yet? This Saturday, May 21st, from 11am - 8pm, we're bringing 100+ of the most unique indie vendors and food artisans to 82 Mercer Street in SoHo, NYC for a one-day shopping extravaganza!

Be one of the first 300 shoppers and you'll receive a goodie bag packed with swag. All you BUSTies won't want to miss these -- we're giving away special BUST Magazine tote bags that were created just for this event by Night Owl Print Shop.

In addition to shopping, two amazing chef-authors will be signing and selling copies of their new books. Come meet them in person!

At 3pm, Erin McKenna, owner of Babycakes vegan bakery will be signing BabyCakes Covers the Classics: Gluten-Free Vegan Recipes from Donuts to Snickerdoodles.

At 5pm, Gabrielle Hamilton, owner of the Lower East Side restaurant, Prune, will be signing Blood, Bones & Butter: The Inadvertent Education of a Reluctant Chef.

Hungry? We've got you covered. In addition to our specialty food vendors, who are selling everything from cupcakes to pickles, the Red Hook Lobster Pound's new food truck will be parked outside, serving up their famous lobster rolls. For dessert, pick up a gourmet ice cream sandwich from the Coolhaus Ice Cream Truck!

And as always, DJs -- DJ Suzy Chase and DCD Collective -- will be spinning the grooviest tunes as you shop and nosh.

Rockaway Beach, Here we Come!


rockaway.jpgThe rumors circulating are true. Andrew Field of Rockaway Taco and Jean Adamson of Vinegar Hill House invited us to be a part of their Rockaway concession takeover at 96th street! So, beginning the 28th of May, we'll be opening our first summer boardwalk concession I like to call the BabyCakes Donut and Waffle Hut. .Brooklyn Based blog breaks it down for you:

96th is going to be like going to a weekend-long music festival, with a wide variety of bands and scenes. Rockaway Taco will serve Mexican street food, according to Andrew Field. Tortas, elote (corn with cheese and mayo), ceviche and salads will complement the taco-centric menu around the corner from Rockaway Taco's original location (which opens Thursday). "We don't want to totally defeat the vibe we have going on down at the shack," said Field, explaining the two different menus.

Chef Jean Adamson (an owner of Vinegar Hill House ) and Lindsay Robinson formerly of Diner, Bonita and other Brooklyn restaurant standouts, have formed a business called Motorboat & the Big Banana that is like a fry shack with a sense of humor. They'll serve fries and dipping sauces, including a homemade cheese sauce incorporating bacon and pickles, oyster po-boys, fish and chips and seasonal items like tomato salad and raw oysters when available. They'll also sell big bananas-chocolate covered frozen bananas dipped in pretzels, peanut, toffee, the works.

The vegan bakers at Babycakes just joined the 96th Street gang as well, and Veggie Island, a farm stand around the corner that sells produce from chef favorite Guy Jones, will add smoothies and breakfast items to the mix. A few other players are still in the process of finalizing plans for the space, and there will be coffee and a bar..

We'll be slinging donuts, frozen cream sandwiches, fresh waffles for the surfers in the wee hours of the morning as well as a few unexpected twists. So get on the A train and bring your Beach Party Attitude! This summer is going to RULE!!!!
